Breakfast Challenge Day 1: Healthy Breakfast Suggestions

Well, the breakfast challenge began today, with a not-so-inspired but healthy breakfast in our house of sprouted grain (Ezekiel) bread with nut butter and a pear (at least part of a pear). My assistant, Maddie’s household had a more inspired start -- with a new kind of smoothie -- inspired, she tells me, by a magic bullet infomercial. (I love those things!)

We’ll be including our favorite recipes as we go along this month, but this morning’s realization was that, as with any game, I probably should start with a game plan. Here’s a list of possible breakfast options -- so I don’t have to think TOO hard first thing in the morning.

Suggestions for Healthy Breakfasts

Oatmeal with fruit -- use milk or almond milk to cook the oatmeal for protein, stir in your child’s favorite fruit (a little dried fruit often such as dried apricots and raisins goes over well in my house), and sweeten with a bit of real maple syrup.

French toast with Fruit -- I forget how quick French toast really is to make. Prepare it with whole wheat bread, dipped in beaten eggs (with a little milk, or rice milk if your child is allergic), and serve with fresh fruit. This combines the protein of the eggs with the complex carbohydrates of the bread.

Whole Grain bread or English Muffin with nut butter, bananas on top, glass of milk (or rice/almond milk) -- again, the mix of protein and complex carbohydrate is key here. I especially like this breakfast because it is so easily adaptable to children with food allergies, while maintaining a great carb-protein balance. I usually use almond butter, but alternate it with peanut butter and cashew butter.

Breakfast burritos -- whole wheat (or spelt) tortillas, eggs or egg whites, and, if your child likes it, some avocado slices (a great fat for the brain and body!) and you’ve got a healthy start that is also completely portable. (I know this from running late, unfortunately, and so does my car.)

Scrambled eggs, turkey bacon, whole grain toast -- simple, great balance again of protein and complex carbohydrates

Smoothie -- with yogurt and fruit are delicious and great for warmer weather. Because my son is allergic to dairy, I substitute for dairy free yogurt, or hemp protein mixed with rice milk or almond milk, and mix them together in the blender with blueberries, nut butter, and sometimes raspberries as well.

Leftovers -- this isn’t going to fly with every child, I admit, but remember, young children especially don’t have the static idea of what breakfast is and isn’t that adults do (and even most adults I know are willing to break the ‘rules’ of breakfast for cold pizza :)). With this in mind, you can try Japanese-style breakfasts, like miso soup, Vietnamese-style pho: broths with meat or tofu and noodles, or try serving last night’s chicken and veggies. I never feel better than when I dispense with what I feel I should have and eat what my body likes (this has included chicken salad, sweet potatoes and veggies with tofu or poultry, and occasionally, when I lived across the street from Japantown in San Francisco, sushi.)
