Recipe Weekend: Yummy Vegan Cream Cheeze and Jam Roll-ups from the Blissful Chef
For Recipe Weekend this weekend, I’m going to share the blessings of a new chef I’ve discovered - and how she changed my lunchbox karma when my husband (the lunch-maker in our family) went out of town... The recipe that salvaged my son’s lunch from the nut butter and jam doldrums I’m sharing here. New lunch ideas come just in time for Summer, where I’ve now got to provide lunch for not just Aidan, but whatever kids are at our house playing as well... It has to be healthy enough to make me feel good about what I’ve given to other people’s children(I work in health after all:)), and yummy enough that the kids want to come back. Let me know what you think, and feel free to offer us other healthy, delicious alternatives over here - it’s lunchtime again and we’re starving!
Blissful Cream Cheese and Jam Roll-Ups
- tortilla (can be spelt or gluten-free tortillas)
- Tofutti cream cheese
- favorite fruit-sweetened jam
- 3-4 slices of a favorite lunch meat (we used Tofurky, a great vegan option)
#1. Toast a tortilla (can be spelt or gluten-free tortillas)
#2. Spread Tofutti cream cheese on the tortilla.
#3. Add your favorite fruit-sweetened jam (I like raspberry for this).
#4. Top with lunch ‘meat’ such as Tofurky, 3-4 slices
#5. Roll up into ‘burrito’ shape.
#6. (Optional) Cut into pinwheels for bite-size snacks, or eat as-is.
Option for kids or adults: blanch greens (kale or swiss chard work well) and add these on top of the Tofurky. Add alfalfa sprouts as well for a super-healthy, delicious crunch (I absolutely loved alfalfa sprouts on everything when I was a child. Maybe your child is a kindred spirit?)
