The Soda Fountain as a Healing Remedy?

Have you ever put candy cap mushrooms into your soda as sweetener, or used celery as the basis of a milkshake? We’re at The Ice Cream Bar in SF. I know that ice cream bars aren’t the usual focus of a health-inspired site, nor are they typically on my radar. But artisanal products and creative ideas inspire me, so when a couple on our bus tells us about this old-style soda fountain that creates their own soda fountain, remedy, tinture, ice cream bartinctures and aromatics from scratch, hires seasoned bartenders and then on-the-spot delivers malts and sodas made to order, I’m intrigued. I tell myself we’re only going there to investigate...

It turns out, as our bartender Odie tells us while making up our elaborate phosphates and sodas by hand, and with the precision of a seasoned herbalist, we’ve stumbled into a bit of health lore. Soda fountains were invented by pharmacists in the 1850s, where ‘sodas’ were used to administer tonics, plant extracts and various drugs -- such as caffeine and cocaine to cure headaches. Turns out, drugs alone are not necessarily palatable (not difficult to imagine if like me you chewed up your parents’ unsweetened vitamin C supplements as a child, just to see what they would taste like...) Sodas and other ingredients were mixed in to make them fizzy and easier to swallow. The birth of the chocolate syrup-bourbon malt-peanut butter cookie ice cream-peanut brittle shard-phosphate of the new millenium (see The Ice Cream Bar for the experiential research on this one) was born.

soda fountain, remedy, tinture, ice cream barWhile it wasn’t until prohibition that the soda fountain became popular as a social destination to fill the void left by the absence of legal bars -- and wasn’t considered healthful any longer, it’s interesting to me that soda fountains & their often-paired ice cream parlor had their roots in the healing remedies... The research was difficult, but someone had to do it. :)
